Fresh Tomato Salad with Burrata and Sumac

Serves 2

Colorfull tomatoes and burrata with a fresh, tangy sumac dressing, topped with wood sorrel. Simple, beautiful and ready in minutes.

Ingredients

Salad

  • 400 g tomatoes
  • 2 burrata

Dressing

  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 tsp sumac
  • Salt & pepper

Topping

  • A sprig of wood sorrel (or any fresh herb)

Method

  1. Slice the tomatoes and tear the burrata into smaller pieces.
  2. Whisk together all the dressing ingredients and pour over the salad.
  3. Sprinkle with wood sorrel and a little salt and pepper.

SERVE WITH

Scrambled eggs for breakfast or lunch.
Roasted chicken and broccolini (or baked potatoes) for dinner.

About the ingredients

Sumac: A deep red spice made from dried berries with a tangy, lemony flavour. Typically used in the Middle Eastern kitchen. It adds acidity and color to the dish.
Burrata: A fresh Italian cheese with a creamy centre, rich in protein and good fats — a perfect combination that keeps you full.
