Avocado Wrap with Hummus, Tomato and Cabbage

Gives 2 wraps

A delicious egg and avocado wrap filled with hummus, fresh tomato, pointed cabbage, parsley and almonds. Light, protein-packed and ready in under 10 minutes.

Ingredients

Wrap

  • 4 eggs
  • 1 avocado
  • Pinch of salt
  • Olive oil

Filling

  • 1 jar hummus
  • 2 tomatoes
  • 1 handful pointed cabbage
  • handful parsley
  • Almonds

Method

  1. Blend eggs, avocado and a pinch of salt together until completely smooth.
  2. Heat a thin layer of olive oil in a pan over medium heat. Pour in the egg mixture and cook until set. Flip and cook for another 30 seconds. Slide onto a plate and leave to cool for a minute.
  3. Thinly slice the pointed cabbage, dice the tomatoes and roughly chop the almonds and parsley.
  4. Spread a generous layer of hummus over the egg wrap. Top with cabbage, tomatoes, parsley and almonds. Roll up tightly and slice in half.

TIP

For a keto or low-carb version, swap the hummus for pesto or full-fat cream cheese.
